Healthy Gourmet Truffles [vegan]
Why spend so much money on store-bought chocolate truffles when you can easily recreate them at home? These decadent, melt-in-your-mouth truffles are rich, creamy, and extremely simple to make. Bring them to a dinner party, and someone will sure be begging for your recipe.
Dark Chocolate Truffles
Ingredients
1 1/3 cup non-dairy dark chocolate, finely chopped
1/2 cup coconut milk
Toppings of choice (I used unsweetened cocoa, chopped hazelnuts, and Dark Chocolate Covered Chia Seeds)
Instructions
Heat coconut milk until warm.
Pour coconut milk over the chocolate in a bowl. Set aside for 5 minutes.
Stir mixture until completely smooth.
Chill in the refrigerator for 2-3 hours, or until almost completely solid. To test, insert a knife into the chocolate. If knife comes out mostly clean, the chocolate is ready.
Use tablespoon to scoop out bite-sized balls. Gently roll into balls between your hands, then toss in toppings.
Refrigerate overnight.
Let truffles come to room temperature for 10-15 minutes before serving. Enjoy!
Almond Butter Truffles
Ingredients
1 cup almond butter
1/4 cup maple syrup
2 tablespoons coconut flour
pinch of sea salt
Instructions
Mix together almond butter and maple syrup until combined.
Add coconut flour and salt. Stir until mixture forms into dough.
Roll dough into bite-sized balls and place on a parchment-lined baking sheet.
Melt chocolate chips until smooth. Drizzle melted chocolate over the balls.
Refrigerate overnight.
Let truffles come to room temperature for 10-15 minutes before serving. Enjoy!
