Healthy Chocolate Chunk Pizookie [vegan, gf]
In college, my friends would go to BJ’s every Tuesday for its $3 Pizookies. I never went with them because Pizookies aren’t vegan, but every once in a while when my roommates bring some home, I’d be lying if I said I never salivated at the sight of their Chocolate Chunk Pizookie at 1 o’clock in the morning…
Well, I ain’t gonna suffer no more because I recreated this dessert at home! I don’t know what it tastes like compared to BJ’s, but I can guarantee that my version is healthier and much better for you.
This Healthy Chocolate Chunk Pizookie is not only vegan and gluten-free, but also made with no refined sugars. This recipe only calls for 11 ingredients, and the result is a skillet cookie that is perfectly soft and chewy in the center, with slightly crisp edges on top.
There is only one way to elevate this recipe, and that is to top it off with So Delicious’ Very Vanilla Cashewmilk ice cream. It’s the best vanilla ice cream on the diary-free market, in my humble opinion.

Ingredients
For 4-5 servings, you will need a mini 5-inch cast iron skillet.
1 Flax egg (1 tbsp flaxseed + 2.5 tbsp water, set aside for 10-15 mins)
1 Banana, ripe
3 tbsp Almond butter
1 1/2 tbsp Coconut sugar
1 tbsp Coconut oil, melted
1/2 cup + 1 tbsp Almond flour
1/3 cup Oat flour (I just blended up some rolled oats)
1/4 tsp Baking soda
1/8 tsp Sea salt
1 tsp Cinnamon
1/3 cup Dark chocolate chips
Instructions
Preheat oven to 350 F.
In a mixing bowl, stir together flax egg, mashed banana, almond butter, sugar, and coconut oil.
In the same bowl, add almond flour, oat flour, baking soda, cinnamon, and salt. Mix well.
Fold in the chocolate chips, leaving a few to sprinkle on top before baking.
Transfer mixture to a lightly greased 5-inch cast iron skillet. Sprinkle remaining chocolate chips over the top.
Bake for 25-30 minutes or until golden brown.
Cool for 10-15 minutes or until the skillet is cool enough to touch.
Top with vanilla ice cream and enjoy!
