Sweet & Spicy Sweet Potatoes [vegan]
Sweet potatoes have been my go-to meal ever since moving into my own apartment. Throw one in the microwave for 6-7 minutes, and you’ve got yourself a perfectly cooked sweet potato. I usually pair my sweet potatoes with whatever is left in the fridge, or if I don’t feel like washing extra dishes, a smashed avocado on the side.
However, when I do want to spice things up, I always resort to these Sweet and Spicy Roasted Sweet Potatoes. They are perfectly crisp and caramelized on the outside, with an incredibly tender center. So many people have asked me for the recipe, and I am excited to finally share it with you!
Ingredients
6 sweet potatoes, cut into 1/2-inch pieces
3 tbsp olive oil
1 tbsp packed brown sugar
1.5 tsp salt
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp cinnamon
InstructionS
Preheat oven to 425 degrees.
Place sweet potatoes in a large bowl and drizzle with oil.
Add all ingredients and stir to coat sweet potatoes.
Spread sweet potatoes on a large baking sheet.
Bake for 15 minutes.
Flip and bake for another 15 minutes.
