Crispy Peanut Chili Tofu [vegan]

Whenever I feel homesick, I find myself craving food reminiscent of Asian flavors. And these Peanut Chili Tofu Bites tick all the boxes––slightly spicy, slightly sweet, and fully flavor-packed.

I like to marinate the tofu in peanut sauce and give it a quick stir fry to create that perfectly golden brown, fragrant coating. You can also drizzle the peanut sauce directly over the tofu bites as a quick side dish (and let’s be honest, for easy cleanup). Trust me, this is a recipe that you just cannot mess up!

I have made this recipe several times since the quarantine started, and I have no plans on stopping. I will not be traveling to Asia or seeing family anytime soon, so I am counting on this dish to bring me a taste of home.

Ingredients

  • 1 block Extra-firm tofu

Peanut Chili sauce:

  • 1/4 cup Peanut butter, unsalted

  • 2 tbsp Soy sauce

  • 1 tbsp Sesame oil

  • 1 tbsp Sriracha

  • 1 tbsp Maple syrup

  • 1 tbsp Lime juice

  • 2-4 tbsp Water, adjust depending on desired consistency

  • 1/8 tsp Garlic powder (or 2 cloves Garlic)

other:

  • 1/2 tbsp vegetable oil

  • Rice and roasted veggies to serve

Instructions

  1. Preheat oven to 425 degrees F.

  2. Use paper towels to squeeze as much liquid out of the tofu as possible.

  3. Cube tofu and place on baking sheet lined with parchment.

  4. Bake for 20-30 minutes until tofu is crisped.

  5. In the meantime, mix the sauce ingredients together in a bowl. Taste and adjust flavor as needed.

  6. Add baked tofu to sauce and stir to coat. Set aside for 30 minutes to marinate.

  7. Heat vegetable oil in a pan and add tofu. Cook over medium heat until sauce thickens.

  8. Serve with rice and a side of roasted veggies. Enjoy!
