Chocolate Chip Oatmeal Breakfast Cookies [vegan]
My mind turns to chocolate chip cookies whenever I'm hankering for something sweet. Sometimes, I succumb to instant gratification and make myself a batch of cookies. Other times, the more rational part of my brain cringes at the thought of all the refined sugar and quite frankly, the prospect of having to wash more dishes. Hence, this recipe is the result of a curious quest to create the perfect “chocolate chip cookies” that taste decadent but are actually simple and healthy for you.
These cookies are made in one bowl with only four ingredients–banana, oats, peanut butter, and dark chocolate–which means they’re vegan, gluten-free, dairy-free, and refined sugar-free (if you use sugar-free chocolate chips like Hershey’s)! In terms of taste, these oatmeal cookies are a mix between banana bread and granola bars, with slightly crisped edges and a soft, chewy texture.
This recipe is not your traditional chocolate chip cookie. But it satisfies your late-night sweet tooth without the sugar crash and only leaves you with one bowl (and a fork) to clean. What more could you want?
Ingredients
2 Ripe bananas, mashed
1 cup Rolled oats
1/4 cup Peanut butter, unsalted
1 1/2 tbsp Chocolate chips (I used Hershey’s Sugar Free Baking Chips)
Optional (but highly recommend): Walnuts, cinnamon
Instructions
Preheat oven to 350F.
Add mashed banana, oatmeal, and peanut butter into a bowl. Stir until combined.
Fold in chocolate chips and walnuts.
Scoop 1/4 cup of dough per cookie and flatten onto parchment lined baking sheet.
Bake for 10 minutes or until golden brown.
