Cookie Butter Cookies [vegan]

Everyone likes their cookies differently. For me, the perfect cookie is one that has a slight chewiness around the edges. And this recipe for Chocolate Cookie Butter Cookies lives up to every expectation of mine.

These cookies are made with a homemade gluten-free cookie butter, which a friend had given to me for Christmas. While I don’t know the specific recipe that she had used, any brand of cookie butter works, including Trader Joe’s Speculoos Cookie Butter and Lotus Biscoff Cookie Butter. However, this would mean that the cookies are no longer gluten-free (since there is no gluten-free cookie butter on the market, at least to my knowledge).

But don’t worry. If you are gluten-free and still want to try out my Cookie Butter Cookies, I have included a link to a cookie butter recipe, which you could simply make gluten-free by using the appropriate cookies. I have not tried these recipes, but I reckon that making cookie butter at home should not be too difficult to mess up.

I love being experimental in my cooking and baking, and I tend to not make the same thing more than once. However, this recipe for Cookie Butter Cookies is certainly one that I will make again.

Ingredients

  • 1 tbsp ground flaxseed + 2.5 tbsp cold water

  • 1 cup cookie butter (make this recipe gluten-free by using your choice of cookies!)

  • 1/2 cup brown sugar, packed

  • 1/2 cup almond flour

  • 1/2 cup arrowroot starch

  • 1.5 tsp cinnamon

  • 1 tsp baking soda

  • pinch salt

Instructions

  1. Add flaxseed and water to a large mixing bowl. Set aside for 5 minutes.

  2. Add cookie butter and brown sugar. Cream together until light and fluffy.

  3. Add flour, starch, cinnamon, baking soda, and salt. Mix until combined.

  4. Scoop two-tablespoon mounds of dough on a parchment-lined baking sheet. Flatten slightly.

  5. Cover with plastic wrap and refrigerate for at least 3 hours. Chilled dough is mandatory for perfect texture.

  6. Bake in preheated 350F oven for 8 minutes, or until tops are just beginning to set, even if edges look slightly undercooked.

  7. Allow cookies to cool to room temperature.

  8. Enjoy!
