Super Pistachio Ice Cream [vegan]

Nuts are the best food group in my opinion. They are rich in plant-based protein, healthy sources of monounsaturated and polyunsaturated fats, and are jam-packed with nutrients. Not to mention, they come in many varieties and are extremely versatile in cooking and baking.

I appreciate my almonds, hazelnuts, and cashews, but my all-time favorite has to be pistachios. In addition to their impressive nutrition profile, I love that pistachios are bright green in color and are literally translated as “happy fruit” in Chinese! (No wonder I feel so happy after eating them… haha).

My version of the Pistachio Ice Cream tastes deceptively indulgent and is unbelievably easy to make. It contains superfoods such as avocado and spinach, but never in a million years would you have expected that. Trust me, you will never go back to store-bought pistachio ice cream ever again.

Ingredients

  • 2 cups non-dairy milk (I use almond)

  • 1 avocado

  • 1/2 cup fresh spinach (you don’t taste it)

  • 1 cup unsalted pistachio

  • 1/4 cup maple syrup

  • Toppings: chopped pistachios

Instructions

  1. Blend together milk, avocado, spinach, pistachios, and maple syrup until smooth.

  2. Pour the mixture into a loaf pan, top with chopped pistachios, and freeze overnight.

  3. Remove from freezer and thaw until soft enough to scoop.

  4. Enjoy as it is, or in a cone!
